Ideas to make your day shine:
(in order from cheapest to most expensive)

- Go to Mexico
To celebrate my national women’s day, I took a yoga class and am now drinking a delicious coco caffe while I write this post and wait for my bosses to come to work.
Tonight, I am going to make delicious dinner with my lovely roommate and drink wine with Sara. Tomorrow I am going to buy a new bikini for Spring Break 🙂
Back on bananas – I’m obsessed with these fruits. I don’t know why but for some strange reason I have this idea in my head that they aren’t that good for you. Maybe just not that good for me – sometimes they slow me down (internally) and they just don’t have that excitement of a delicious crisp apple or big strawberries or round blueberries. Idk what it is, but right now they’re back in my diet and I’m loving them. I incorporated them into breakfast – covered in cinnamon with a big spoonful of almond butter, flax and more cinnamon and some frozen blueberries with 2 hard boiled eggs (I try not to eat the yolk). Yum delicious and light. So happy.
Salad new fun – some new additions: kalamata olives (from TJs, about $3 a jar and super salty and delicious). Also, I’ve been making a tuna salad. I took half a can of tuna and mixed in some whole grain mustard (the type with the little balls) and a dollop of my greek yogurt. It tastes so naughty and the yogurt just ups the protein. Awesome.
Me and love – early morning funny. Me and my sisters (except Frances) have a message thread on facebook and I took this one at 7am to send to them. Cute 🙂
Last night we pan seared cod with a little teriyaki, sautéed some bok choy with mushrooms, and cut up half a kabocha squash and baked for 25 min at 350. After 20 minutes or so we took it back out and put a thin glaze of bragg’s amino acids and honey on each one. They look very seasoned but a little went a loooong way. Great dinner.
Inspiration for an awesome weekend!
- Friday I ran 3.7 9:30 miles
- Saturday ran stairs and did some freestyle yoga around the track
- Sunday I took off
- Monday I went to a C2 yoga class.
- Tuesday I went to a C2 yoga class before work and a sculpt yoga class after work
- Wednesday ran 5 miles
- Thursday I went to C2
- This morning took a sculpt class!
Hopefully get some fun workouts in this weekend (maybe run to the beach? Santa Monica Stairs? Hiking!?)
What fun workout plans do you have this weekend? Is the weekend usually a bust for you or your best workouts of the week?
Some delicious healthy dinner ideas:
Stuffed mushrooms – they look loaded but it’s all healthy.
We sautéed spinach, onions and garlic. Then when that was nice and saucy we added about half a cup of nonfat Greek yogurt to the skillet for about thirty seconds then separated the mixture into two huge portabellas and baked them at 350 for 15 minutes. We grilled broccolini and skirt steak and served everything together. Yum I love steak but we only cook it once every couple weeks! Great treat. I could only eat half of what was on my plate.
This weekend we also twisted up the salmon. Spread a thin layer (about half a tablespoon) of trader joes pesto across the top and halved cherry tomatoes before we cooked it.
Tonight was meatless Monday and we made a dinner any college student could make for really cheap!!! Eggplant "pasta" with homemade sauce.
Becky sliced up a little less than a full eggplant (<$2) into thin strips, salted them and laid them out to dry. Two hours later I dabbed off the excess salt and squeezed out the water. The eggplant at this point should feel limp and very noodle-like.
We later were thinking we could've just let them dry out sans salt because there was still a good amount of salt absorbed into the eggplant.
We sautéed cherry tomatoes, several handfuls of spinach, mushrooms, loads of onion and garlic with a splash of almond milk (<$2 for sure in total). Simultaneously we sautéed the eggplant noodles then combined when both were hot , eggplant crispy and tomatoes squishy.
Garnished with a handful of arugula, nutritional yeast and a sprinkle of Parmesan. So good, light and also filling! I was a happy clam
Thursday night dinner was unbelievable. We dethawed black cod (for two, it was about $6) so $3 a person. Made one sweet potato into fries ($0.69), some kale chips and brussel sprouts (probably $1). In total the meal was less than $5 per person. And it was incredible.
Next morning I made myself get up before work hit the track for some stars and go to the gym. Fridays are really important workout days because they set the tone for the rest of the weekend!!! And if I’m at work from 8 to 6 I gotta get it in early.
My university is so beautiful. It was such a great morning workout. I killed the track in about 24 minutes (15 flights) and had a 8 minute mile run warmup there. Me and Sara got off work early and sprinted to the 530 sculpt class at core power. We challenged each other to only use 5 pounders (as opposed to 3 pounders, in a hot yoga class, tricep dips with crescent pose lunges is very difficult) and we had so much fun doing it.
Scratch happy hour – sculpt instead. Best decision.
Dinner was well deserved – fresh tilapia.
Today marks day 5 of exercise. Ran 6 on Sunday followed by three days of yoga and running again this morn. Walking a couple hours after running I felt like a train had hit me but now I feel good. I’m gonna double up and hit yoga again after work to streeeetch out.
Dinner last night was straight veggies. I threw some kale into the oven and the chips were amazing. I’m going to start buying two bags so I can make kale chips alot.
I also peeled a clementine in one peel. Dmo calls this the starfish peel and he was very proud of me.
Tonight we made curry. We didn’t have curry paste or coconut milk, but conjured our own sauce with half the container of curry powder, about 2 cups unsweetened almond milk, about 3T of brown sugar, a dash of salt and garlic. We sautéed this crazy looking broccoli, peppers, onions, spinach and garlic, added the rest of the squash (cubed, peeled) and then poured our curry sauce on top. The whole thing simmered for about 20-25 minutes, and we made about 1.5 servings of quinoa to split between the two of us.
It was crazy good, way too much food and I can’t wait to eat the leftovers for lunch on top of kale tomorrow.
This is broccoli romanesco. I’ve been spotting it floating around whole foods for a couple of weeks now and we absolutely love it. It comes looking like a big intimidating flower, but each of those little pyramid shaped things are buds and they snap right off. It has a huge stalk which we don’t cut but the single vegetable alone yields almost 2 cups of broccoli florets. It’s delicious.
The rest of the kabocha squash
The cutest little romanesco broccoli florets
Everything all together
I’m sure all of you have been wondering where I’ve been since Sunday….
It’s been an exciting week of midterms.
I made DMO a bunch of apple slices with almond butter and ate them while he wasn’t looking…
Poor Beck ate half the bag of pistachios because she was feeling desperate and stressed
We made a delicious dinner of veggie stuffed organic spaghetti squash… we used romanesco broccoli (looks like a beautiful flower), peppers, mushrooms, onions and sprinkled low-fat mozzarella… SO AMAZING
WE WENT GROCERY SHOPPING… check the amount of vita coco…!!!
One of my fav bloggers posted a pic of my comment on her instagram… even though she was mentioning Marxel but it was still super exciting
I ate delicious salads in the library
I fell in love with these sunglasses
Becky’s boyfriend sent us (her) this edible arrangement. I ate many pineapple hearts ❤
I got my boyfriend this awesome coffee table from Ziggy the Hipster (ZTHD 13)!!! Check out the bottle cap opener on the left side!!!!
Dmo gave me a box of chocolates the size of my stomach… We ate all of them last night
It’s been a pretty exciting week! I worked out 4 out of 5 days… ran twice, stairs once, weights once, yoga twice, pilates once and sculpt this morning. Was amazing. I was very efficient with studying and exercising.
Killed my midterms!!!
Went to our favorite restaurant Tar and Roses for Valentines Day. It was so romantic and lovely. I gave dmo some chocolate truffles and wine (plus some pressed juice in the morning) and he gave me this giant box of chocolates. I left it at his place and I’m sure hes already eaten 5 more pieces. Yummmm
This weekend should be a good one! We are going to go to his friend’s beach house for a barbecue Sunday and theres no work or school Monday.
Happy presidents day! Better post coming soon 🙂
The catfish we had tonight was so good. Recently me and Beck both have been shifting out of our salmon obsession and trying new fish. The black cod earlier this week was buttery and flakey – at about $6 for both of us, we definitely thought it was worth it.
Tonight we made catfish, lightly breaded and sautéed in olive oil. I really don’t like using too much panko but just enough makes the fish really good. Becky’s dad usually makes it with black bean and corn salsa, but the Whole Foods salsa didn’t look too good. A lot of black beans and only a couple corn kernels. So we made our own. We bought the frontera medium corn salsa, and then I sautéed about 1/2 cup of black beans (rinsed and drained) with some chopped onion and garlic. We split that between us both as garnish and it was so good. We are both so full though – definitely gonna have a good run day tomorrow.
Yoga tonight was awesome. I went to Marxel for some C2 and wore my new boogie shorts from Lululemon. Paired with the new mat I was feeling on top of my game. All my girlfriends like to wear leggings or pants when we go to core power but I cannot stand it. I feel super restricted and itchy and its just not a good combo. Until I got some real yoga clothes I used to just wear these shorts I made out of my solow yoga pants (similar to hard tail) and another pair I made out of old hard tail pants. They were both cotton and I liked their rise and fit (I could even take my shirt off in yoga sometimes! without having any major pinching/squeezing). At the end of the summer when I went home to Chicago for 2 weeks, I went on a major spending spree at the mall and ended up buying these Lucy shorts. They were so much better than the cotton handmade shorts, and now that I have the boogies I really don’t like wearing the antiques. I definitely want to buy some more.
Frozen black cod filet sautéed in panko, olive oil and a touch of teriyaki; 1 serving tricolor quinoa; sautéed crimini mushrooms with brussel sprouts
The most perfect snack in the world: organic pink lady apples, raw almonds and baby carrots. Eat the almonds and the apple in the same bite for a sweet and savory treat. It tastes naughty.
Dinner tonight, unreal. Fresh catfish with black bean/corn/tomato salsa, sweet potato fries and grilled zucchini
